I have never been able to find this SR, and I think I've clicked every wall, indent, statue, lamp, pool, etc. I think it must be in the Ice Shrine but, of course, I could be wrong and it's actually on Hermit Island somewhere.
Could someone tell me where it is so that if I do another playthrough I can find it?

You probably found it because it's not a difficult one and I just realized now that it's displayed as #060 (even though it's #061).
So you have 2 #060 but they really are in fact #060 and #061.

That explains a lot.
Thanks. I thought I was being blind, but apparently not. Nice that my self esteem as an explorer can remain intact.
I noticed the 'easy' SR #60 number and assumed that #61 had to be further on than that, not realizing that I had already collected the other #60.
