With some of the skills it is clear to me why I would want to train all possible characters in them, but others I am not sure what I gain. In particular Botanist and Scouting it is unclear to me what the advantage is for me to train more than one character in them. Does anyone know?

In fact those are skills you may want to select just one character for the training.
